Recipes

Hi Guys,

Is the recipe section still available? I've decided to BBQ a few rabbits on Saturday night and I need a little guidance.

Do I marinade and if yes with what? Or do I just coat with salt, pepper and flour?

Thank you in advance

Mark

OK serious answer ....
You can only really enjoy barbecued rabbit if they are tender kits or young does. If all you have is some tough old bucks, forget it. You will end up at the dentist with worn out teeth and aching jaw muscles.

Assuming you have some nice tender beasts, you can marinade them but need to leave it for about 24 hours in the fridge, turning once or twice. Joint them so that each piece is small enough to turn over nicely. You can marinade with anything as long as there is a lot of fat in the sauce. Rabbit is a dry meat and will soak up fat like nobody's business.

There are a load of good recipes and videos in the internet ... my favourite treatment on a BBQ is ....

Tandoori Rabbit !!! Just Google Tandoori Chicken and substitute with rabbit.

Jointed pieces scored with a knife ... mainly thighs and saddle.
It should work a treat as long as the animal is tender and not tough.
Dont forget to garnish with chopped fresh coriander leaves.

Thank you Raj - Much appreciated.

I shot 2 young does last night and a 3/4 size buck. Think i might make a tinfoil bag and cook the buck in his own juice and the marinade.

I'll let you know how it goes :) :)

Luckily the rain stayed away until the BBQ was over! The rabbit was delicious - Tandoori style via a Jamie Oliver recipe from the internet.
For future reference i will only use the saddle and thighs - As suggested by Raj - as the rest was too fiddly.

Hopefully I'll get out one night this week and get some more for the next recipe :)
