+1 for Red Kite walnut oil, and if it starts to get too shiny you can always rub it down with 0000 steel wool.

I use "CCL Traditional English Gun Products Ltd Fine Wax Polish"
It doesn't make it "shine" nor does it darken the wood.

CCL products are fantastic. Palm it on and rub with vigour. The friction creates a gentle heat that works the oil in. Dry over night and repeat.
